1 shallot, finely diced
1 lb lean ground beef (or substitute with ground turkey or plant-based meat)
1 can (15 oz) white cannellini beans, rinsed and drained

1 1/2 cups low-sodium organic chicken broth
1/2 cup couscous (whole wheat for added fiber)
